I always pack fresh fruit on any trip we take; it’s so refreshing, healthy and easy to eat. Depending on the season, we love to pack strawberries, blueberries, grapes, watermelon, peaches or nectarines, apple slices, melon, kiwi, and even dried fruit like raisins and blueberries. Along with fruit, I love consuming fresh sliced vegetables that you can enjoy on your own or for dipping. These are very easy to eat and take on the go. Safeway’s Signature SELECT offers a wide variety of granola bars, different trail mixes and even bags of packaged almonds that come in small, perfect portions. I also love making trail mix energy balls that are a big hit with kids (and adults!) Salads in a Jar
Making salads in a jar is a very convenient way to prepare a delicious and healthy lunch because they don’t make a mess and save a lot of space. And also, The pots don’t take up much space in the fridge, and you have everything you need for your meal in one jar. And also, The recipe for these jarred salads is a variation on my Tomato Cucumber Chickpea Salad. Still, I added a bit of quinoa for extra protein and fiber and fresh arugula for a complete salad. We have been using the car for two years more than ever to go on vacation or make a getaway. But, unfortunately, the pandemic is what it has. Haven’t you come across a lot of motorhomes on the road?
